Saturday mornings would not be complete with out a yummy, filling, breakfast...
This morning my Mom and I made coffee cake. The best way to kick off a productive Saturday!
I thought I'd share the recipe we you all:
Cake ingredients
4 cups freshly milled flour
2 Tbs. baking powder
1 tsp. salt
2 eggs
2 cups milk
1 cup oil
1/2 cup honey
Topping ingredients
1 cup chopped walnuts
1 cup sucanat (or white sugar)
8 Tbs. butter
3 tsp. cinnamon
Stir together flour, baking powder and salt. Make a well in the center.
Add egg, milk, oil, and honey. Stir just until well mixed. Spread batter evenly in a greased 9x13 pan. Combine walnuts, sucanat, melted butter, and cinnamon; spread over batter.
Bake at 375 degrees for 35-40 minutes or until it comes clean with a toothpick.
Shield with foil if getting too brown.

I made whole wheat, oatmeal pancakes for my family, but I had to drink my protein shake...That was cranberry juice with strawberries.
